Brown rice salad recipe....

I've had a couple of requests for the brown rice salad recipe....


3 cups of vegetable stock
2 teaspoons of olive oil
1 small brown onion chopped
1 1/2 cups of brown medium grain rice
1 teaspoon of finely grated lemon rind
1 clove of garlic crushed
1/3 cup roasted slivered almonds
2/3 sun dried tomatoes chopped coarsely
1/2 cup seeded black olives coarsely chopped
1/2 cup coarsely chopped basil
1/4 cup coarsely chopped parsley

Lime and mustard dressing
2 tablespoon lime juice
2 tablespoons white wine vinegar
1 cloves of garlic crushed 
2 teaspoons dijon mustard.
Combine ingredients in a screw top jar and shake well.

Place stock in a saucepan and bring to the boil - reduce to a simmer covered.
Heat oil in a large saucepan and cook onion until soft...add rice...rind and garlic 
- stir to coat rice in onion mix.
Add stock and bring to the boil...
reduce heat and simmer for 50 minutes or until the rice is cooked and the liquid is absorbed.
Make the lime and mustard dressing.
Add the nuts...tomatoes....olives....basil and dressing to the rice mixture and combine.
Serve salad warm with parsley on top.

Serves 4 - 460cal per serve.

This recipe is taken from the Women's Weekly simple salads recipe book....so all credit to them.
It is such an adaptable recipe.... I have plans for future versions with spinach and pinenuts and parmesan....or any other combo you have on hand.
