There is no question that I am still loving my Veg book.
There is also no question that this weeks winner from the book was the Beetroot Tart.
I used store bought puff pastry.... which in hindsight I wish I had made from scratch....but aside from that....the beets....and the delicious vinaigrette over the top were delightful.
A simple Google search brought the recipe up here for anyone who is interested.

Gosh I love beetroot - but you are a braver man than I, I would never make my own puff pastry! I will make many, many things from scratch but that will never be one of them haha.
