The great zucchini glut of 2018

There is no way I can get to the end of January and not document the zucchini glut.

While BandJ were away touring Europe and enjoying an incredible white Christmas we were at home... braving the heat and jointly in charge of their Veggie patch. 



Lets just say it was prolific!! I would pick everything in sight one morning and then very next morning it would be loaded again.  Its seems impossible that anything cold grow so fast...but these suckers can. 
So of course the fridge was bursting at the seams with delicious and homegrown zucchini (plus squash and cucumbers.) ... and the thought of any going to waste was not an option. 

So I pulled on my kitchen wizard hat and brainstormed ideas to use as much as possible....


I started with batches and batches of zucchini slice.... including some batches dairy free for me.
Then I grated 3.5kgs and stored away in the freezer for later in the year.
I made Zucchini Relish and Chutney...


Plus a batch of cucumber pickles...

I also tried stuffing some squash and baking them....I made a Lebanese baked zucchini dish and a huge batch of raw Pad Thai which was enough for two meals.
No-one can say we haven't eaten our greens!
