Chicken vegetable soup recipe...

A few weeks ago I shared some cute little ramekins I had found in my Op shop travels....
I had put them to good use and filled them with my own version of..
Chicken and Vegetable soup.

Today I thought I would share the recipe for anyone interested.

This makes a huge pot.....it is a thick style of soup....and we all love it here at our place.


Ingredients

one litre of chicken stock
a roast chicken (I buy a small roast IGA chicken and remove all the meat....discard the skin and bones)
a cup of risoni
vegetables - onion..carrots...celery...parsnips....turnip....swede and parsley
Olive oil

Method
Dice all the vegetables
shred the chicken - white meat only
Heat some olive oil and a knob of butter in the bottom of a heavy based stock pot 
Sauté the onion and celery at  medium heat until it is soft and golden and sweet.
Tip in the litre of chicken stock and a cup or so of water
Add the remainder of the vegetables and bring to the boil....
Turn down to a simmer...
After the vegetables have had a head start add in the Risoni and shredded chicken
Continue to Simmer until the Risoni is cooked..
You may need to add more water as the Risoni swells..
and that's it...easy chicken veg soup.


I have had this for lunch three days in a row....yummo!

Sounds and looks scrumptious Mardi... am going to have to try this one for sure... and love your ramekins... made your brown rice salad last night... so filling and delicious... had left overs tonight... can see its one I'll be making many times more too:)) happy crackers planned for tomorrow... thank you so much for sharing such yumminess...

  5. I just wanted to write and say thank you for the recipe. As I speak my 6 year old son is onto his 4th consecutive bowl. Yeah he is a good eater. It is cold and wet here in Sydney and the perfect meal with some fresh bread I bought today. Thank you!
