My Sugar free kitchen this week....

Being back at work every day this week has meant a little less time in the kitchen.
It has also meant that I've had more time to read.....so luckily I have added a few new books to my stash.
These are my latest favourite reads...

Nourishing traditions by Sally Fallon - I love it ....I love the break down at the beginning of the science behind food and nutrition.....and the recipes are wholesome home baked .. I can see I will use this time and time again.

Vegetable bible - picked up at Big W for $10.00 and has some wonderful simple tasty recipes.



Supercharged food by Lee Holmes - brilliant book.... lots of fabulous recipes and ideas for those who are gluten...lactose or sugar free....


So.....did I actually make anything exciting this week?
Does a bowl of Quinoa count?
Delicious for breakfast.....or as the base for salad....so versatile....
This week I made a big bowlful and took it for my night shifts.....it is so warming heated with some milk later in the night and helps get me through.


Then this morning I made some pumpkin chips...
Yummo!!!!
I am actually feeling quite ill....Ive snacked on them ALL day....they are so moreish....
they call me....
Mardi.....eat me....eat me.....

So simple to make....
Slice pumkin thin with a mandolin....spread in a single layer on a tray...
brush with olive oil....
sprinkle with sea salt...
leave for 5 mins of or so for the salt to draw out some moisture...
pop in the oven for 30mins..
keep an eye on them...some of mine got a little suntanned.

They do crisp up even more once they are out of the oven....any that didn't I threw back in for a little longer.
Apparently they will keep for two weeks....Yeah right....they barely made it to lunch time!!



So that is it for this week.....
How am I feeling overall?
Truthfully?
My eczema is bad.....something I am eating is triggering it badly (possibly stevia) so I'm about to eliminate a few things to try and work out what is causing the flare.
I have gained a little weight.....no sugar....but too much other food quite obviously.
Otherwise? Im feeling good...yay!
Next week my focus will be less on the baking and more on the vegetables...stay tuned.

  1. im loving finding new vege recipes to try and wil be looking out for the big w cook book. your pumpkin chips look yummy....ive just used some natvia[stevia but using the best part of the plant] from coles so will see how that goes..... so cutting back sugar doesnt mean we can twice as much as everything else then ;)
