Our week thats been....

21 November 2020

I don't think any of us saw this week coming.... after almost a year of Covid restrictions and South Australia being Covid clear for many months... a cluster developed and we were plunged into a 'lock down' or a 'circuit breaker' as it was called.

We went from pretty much life as normal.... to locked in our homes within hours (essential workers of course had exemption to work)
Its been an interesting few days.... I found myself making face masks and debating whether we had enough supplies in the house to see us through (of course we did)

Thankfully the lockdown was short lived... and restrictions have eased already - business will be able to reopen as of midnight tonight.

In others new this week ...

  • I am wondering if this lockdown will have an affect on my upcoming surgery date....  I'm waiting to hear an update...and I'm totally prepared to go with the flow. I did have a little smile to myself when on Monday we headed to Adelaide for a 'pre-surgery' procedure and my husband refilled all our hand sanitiser bottles with a DIY hand sanitiser before we left home. He loves making his with Spearmint Essential Oil.... so we were both sanitised and mood enhanced all day.

  • I finally started the quilting of my Nova Star Quilt...  for a quilt I love so much I feel I've bodged the quilting a little.... but I just want it done so I can move on to the next project.

  • My garden has a been the cause of a little lost sleep this week.... I feel things aren't growing as well as they should and this is worrying me. Have I added compost at the wrong time? .. am I under or perhaps over watering? Is the location too shaded?

  • I have always been a bit hit and miss with breakfast eating - I used to skip it and then eat peanut butter on toast at 11am - all the time cursing myself for not eating better. However a few months ago I started making a batch of these overnight oats every few days. These little individual pots have been a game changer for me. I love them heaped with a few spoons of homemade granola.

Recipe -

Frozen Berries - Blueberries or Mixed Berries are my favourites
Coconut Milk - I like the Pureharvest Coco Quench
Oats - I have been using the organic quick oats from Woolworths
Chia Seeds
Hemp seeds
Cinnamon

  1. Choose a jar with a wide top
  2. Tip some frozen berries into the bottom of the jar - maybe 1/3 cup
  3. Add a heaped 1/2 cup of organic oats
  4. Shake in about a dessertspoon of chia seeds
  5. a sprinkle of hemp seeds.... and 1/2 teaspoon of cinnamon.
  6. Pour over the Pureharvest coco quench and shake.... I check to make sure it isn't too dry and add more milk if needed.
  7. Store them in the fridge.

I usually make a batch of 3 at a time.... and I give them the odd shake while they are in the fridge....because you know chia seeds.

If you get a chance to make them ...I would love to know your thoughts.
